It was originally a Blanc de Blancs made using Chardonnay from two plots in Avize, but from the 2007 vintage, his son Guillaume, who was given the final say over all processes, came up with the idea to transform it into a blend of Pinot Noir and Chardonnay.

Jacques Serros was founded in Avize in 1949 by the father of current owner Anselm Serros. The current owner, Anselm, took over the domaine in 1974 after training in winemaking at Leflaive, a prestigious domaine in Burgundy, and began brewing Champagne.
Similar to Burgundy, Champagne is fermented in 228 liter French oak barrels, including new barrels, and then aged in barrels for 6 months. Naturally, the Champagne had a strong oak aroma and hints of oxidation derived from barrel aging, and was criticized by traditional producers as ``not Champagne-like,'' but by American journalists. It was praised as ``Sparkling Colton Charlemagne''. In 1993, all the grapes we harvested were vinified in wooden barrels.
