Old sake “Bowmore Darkest”
('90s old bottle)
Currently, the 15-year-old Darkest has been released, but although it is aged in sherry casks, the taste is slightly different.

This Darkest is made by aging in bourbon barrels for over 12 years and further maturing in sherry barrels for over 2 years.
Another feature is the aging in the No. 1 aging cellar, which is located so close to the coast that it is exposed to wave spray, and some of the barrels are lower than the sea level at high tide, so it is a place that is likely to be strongly influenced by Islay's tides. is.

As the name "Darkest" suggests, it is a very dark tone. The peat scent is not overpowering, and the balance between the sweet sherry scent, smokiness, and saltiness is pleasant. Many of the Bowmores from around this time had a strong, negative perfume-like scent similar to that of cosmetics, but I wonder if Darkest is due to the masking effect of the sherry barrels? I think it's a nice combination of raisins, dark chocolate, salted caramel, etc. without feeling like a particularly strong perfume.
