Grapes suitable for their own Champagne are sourced from the 3.5ha single vineyard "L'Argilier" owned by Guillaume's friend Jérôme Coessens, a producer in Ville-sur-Ars in Aube, southern Champagne. (The legal classification is Négociant Manipulant (NM)) This Blanc de Noir is made from Pinot Noir grown in the rocky area at the bottom of the slope of this field. Guillaume himself harvests the grapes grown by Jerome in this Larzière plot and brings them to Domaine Jacques Serros for brewing. Primary fermentation takes place in 228 Otaru barrels. The brewing feature is the length of the barrel aging period; after the primary fermentation, the wine is aged in small barrels for 24 months, after which it is transferred to stainless steel tanks and bottled. Disgorgement after 30 months of aging in bottle. I can feel the nuances of oxidation, complexity, depth, and energy that are reminiscent of my father, Jacques Serros.
