The grapes for their champagne come from the 3.5-hectare "Largières" vineyard, owned by Guillaume's friend Jérôme Coessens, a winemaker in Ville-sur-Ars, Aube, southern Champagne. (Legal classification: Négociant-Manipulant (NM)). This Blanc de Noirs is made from Pinot Noir grown on the rocky bottom of the vineyard. Guillaume personally harvests the grapes cultivated by Jérôme in the Largières plot and brings them to Domaine Jacques Selosse for vinification. Primary fermentation takes place in 228 small barrels. The wine's distinctive vinification is characterized by its long barrel aging period: 24 months after primary fermentation, the wine is then transferred to stainless steel tanks and bottled. It then undergoes 30 months of bottle aging before disgorgement. The wine exhibits the subtle oxidative nuances, complexity, depth, and energy reminiscent of his father, Jacques Selosse.
