Harvested on August 30, 2020. Yield: 35hL/ha! The vineyards are divided into 0.63ha in the commune of Les Lulets, 0.25ha in Les Grands Poizets, 0.27ha in Les Peau Bois, and 0.13ha in Les Petits Poizets, for a total of 1.28ha. Maceration took place in wooden barrels for 22 days, followed by fermentation using wild yeasts. Aging took place for 12 months in 14hL Georgian qvevri and 3 months in stainless steel tanks.
The ripe fruit of dark cherries is layered with the noble scent of rose petals and the refreshing scent of violets. The wine is soft and juicy, with a gentle, rich flavor that permeates the palate, and is packed with concentrated umami like dashi and the astringent taste of fine-grained tannins!
