Harvest date is August 30, 2020. The yield is 35hL/ha!The plot is a total of 0.63ha of the Les Lures field, 0.25ha of the Les Grands Poiseaux field, 0.27ha of the Les Peau Bois field, and 0.13ha of the Les Petits Poiseaux field in the commune. Field area of 1.28ha. Maceration in wooden barrels for 22 days, using natural yeast for fermentation. Aged for 12 months in Georgian Qvevri 14hL and 3 months in stainless steel tanks.
The ripe fruit of dark cherries is layered with the noble scent of rose petals and the refreshing scent of violets. The wine is soft and juicy, with a gentle richness that soaks in, and is packed with a concentrated flavor like dashi and an astringent taste from fine-grained tannins!
