A wine made from Chardonnay grown in plots with thin topsoil.
There is a long, transparent sticker on the bottle neck that reads "Le voyage forme la Jeunesse."
This is a phrase often used by Gerard Schreur, whom Kagami admires, and it means that ``travel strengthens young people (or, as we say in Japan, ``let the pretty girls travel''?)''

This Sonorite 2012 wine develops very slowly, and its owner, Mr. Kagami, was constantly on edge.
In the end, the wine was aged in large barrels for a full four years without any ouillage (topping up), and after bottling it was left to rest for more than five years before being released.
Imagine how financially challenging it must be to release your second vintage wine after letting it age for over nine years since you started making wine.

This wine has a slight oxidative aged nuance, and apparently immediately after opening, a "certain acidity" (that's how Kagami described it, so I'll just write it that way!) is noticeable, but it finally shows its true potential after the second or third day.
So please make sure to open the bottle the day before!
