Sonorite 2012 has grown very slowly as a wine, and his parent, Mr. Kagami, has been nervous about it.
In the end, the wine was aged in large barrels for 4 years without any ouiage, and even after bottling it was aged for over 5 years before being released.
I can't imagine how financially difficult it would be to release wine from the second vintage after we started making wine, after letting it rest for over 9 years.

It is a wine with a light oxidative aging nuance, and it seems that "a certain acidity" (Mr. Kagami expressed it that way, so I will write it as is!) is noticeable immediately after opening the bottle, and it finally shows its true potential after the second or third day. That's what I will do.
