Like Petit Verdot, this wine is made from 100% Merlot purchased from Podere Albiano. It is fermented with whole bunches and macerated at low temperature, using only free-run juice. Some amphorae are used for aging, but these are highly airtight amphorae that were specially ordered for this wine from Tava, one of the top manufacturers. Matthew himself is so confident in this wine that he says, "This wine is an outstanding one among the fine Merlots produced in Tuscany."
