Harvest date: August 29, 2020. Yield: 35hL/ha. Grapes are from Les Vignes Blanches. The vineyard is located on a south-facing slope, and as the plot name suggests, the vineyard is covered with white limestone. Mercurey is the hometown of Fred's wife, Laure. Maceration took place in wooden tubs for 25 days, and wild yeast was used for fermentation. Aging took place for 12 months in 14hL Georgian qvevri and 3 months in stainless steel tanks.
The ripe fruit aroma of dark cherries is layered with the sweet aroma of licorice and praline. The wine is rich, smart, and full-bodied with concentrated fruit and a mellow flavor, with refined minerality and astringent fine-grained tannins supporting the structure!
