100% Chardonnay and maceration wine. The style is quite different from the 2015 released under the same cuvée name, even though it has the same maceration. This year, we started brewing as a regular white wine (direct press without maceration), but as mentioned above, it was a very hot year, and for various reasons, the alcoholic fermentation did not finish even after 2 years of aging. After direct pressing the 2020 Chardonnay, we immediately destemmed the pomace and used yeast from the 2020 grapes in addition to this 2018 wine to encourage re-fermentation. After that, it was marinated for about 6 months until it became dry, and then only the free-run wine was extracted and allowed to settle for several months before being bottled. Although it is a white wine, it has undergone maceration, so I think the taste is similar to red wine.

Now that I think about it, I think it's a diverse wine that represents the climate of this year. The color is deep and the aroma is rich and complex. The impression is that it is packed with various elements. At the time of bottling, each of them was facing different directions, but over time they are coming together. However, I think it will still take a few years for things to really come together, so I strongly recommend that you look at them for a few more years before enjoying them. If you want to drink it early, unlike the red mentioned above, you can also drink it immediately after uncorking. Currently, it is characterized by the scent of liqueurs made from fruits with one seed, such as cherries and peaches. However, since this is a large-scale wine, I store it slowly in a cave.
