Like Petit Verdot, this wine is made from 100% Merlot purchased from Podere Albiano. It is fermented with whole bunches and cold maceration, using only free-run juice. It is aged in some amphorae, which are highly airtight and were specially ordered for this wine by Tava, a leading manufacturer. Matthew himself is so confident in this wine that he says, "This wine is an outstanding example of the fine Merlots produced in Tuscany."
