Harvest after reaching perfect ripeness. Since the beginning of October every year. Fermentation is done with wild yeast only. Fermentation is done in open fermentation vats, and maceration is over 20 days. Tannins and pigments are completely extracted. The wine is then aged on healthy lees in large barrels for over 108 months. Although it has been aged in large barrels for nine years, there is no hint of oxidation at all.

DARIO PRINCIC

``Collio'' has become popular worldwide as ``orange wine.'' There are many famous producers, but Dario Princic's wine is unique among them. A close friend of "Yosko Gravner" and a classmate of "Stanko Radi Con" and "Niko" of La Castellada. The winemakers who are good friends come from a family that has made wine for generations. ``Dario Princic'' was different. When he was young, he worked as a distributor of ingredients and Gravenel and Radicon wines to nearby restaurants and hotels.

``Salami, cheese, wine. They only carried delicious food made by local artisans. Knowing what tastes good is the most important thing in winemaking.''

As the wines of his friend's winemakers became popular, he could not suppress his passion for winemaking and began making wine in 1993.

``Many of the technical aspects of cultivation and brewing were learned from Stanko Radikon. I liked his wine the most, and it was the simplest.''

Although it is the youngest producer among the popular Collio producers, it is now very popular due to its unique personality.
