The playful name combines two words: AIUTO!, which means "Help!" in Italian, and "A YUTO!", named after the son of Mr. Ota, the president of importer Vinaiota.
It was supposed to be a limited edition for 2005, but Ezio himself liked the name and blend of the resulting wine, so it has been released under the same name ever since.
It has now become one of the most popular fermented white wines.
It has a naturally rich flavor that is beautifully balanced with the bitterness and astringency derived from the peel.
