I Need the Sun・Miroirs・2018

This wine is made from 100% Chardonnay and is macerated. Despite the same maceration, its style is quite different from the 2015 vintage, released under the same cuvée name. This year, we began vinifying it as a standard white wine (direct press, no maceration). However, as mentioned above, it was an extremely hot year, and for various reasons, alcoholic fermentation was not complete even after two years of aging. Therefore, we immediately destemmed the pomace from the direct pressing of the 2020 Chardonnay, added it to this 2018 wine, and used yeast from the 2020 grapes to induce re-fermentation. It was then macerated for approximately six months until it became dry, after which only the free-run wine was extracted and allowed to settle for several months before bottling. Although it is a white wine, due to the maceration, I believe it tastes closer to a red wine.

Looking back, I think this is a diverse wine that reflects the weather of that year. The color is deep, and the aroma is rich and complex. It gives the impression of being packed with many different elements. At bottling, each element was pointing in a different direction, but over time, it is coming together. However, I think it will take at least a few more years for it to truly come together, so I highly recommend enjoying it after observing it for a few years. If you plan to drink it soon, unlike the red wine mentioned above, it is fine to drink it immediately after opening. Currently, it has a distinctive aroma reminiscent of a liqueur made from cherries and peaches, or so-called single-pitted fruits. However, this is also a large-scale wine, so it will need to be stored slowly in the cellar.
