(The following is from the importer's materials.) Sylvain believes that wines with deep colors and strong tannins, like those from Bordeaux, mask the fruity aromas and flavors characteristic of Pinot Noir. Therefore, he strives for wines that are deep in color and concentrated, yet with a good balance of tannins and fruitiness. The vines are cultivated using the lutte raisonnée method. Organic fertilizer is used, along with chemicals to kill weeds and plowing. To control pests, hormone capsules, one of the first methods to be introduced in Burgundy, are used. Hand-harvested grapes are 100% destemmed and cold-soaked for 2-10 days. Juice concentration is not used, as it is believed to diminish the grapes' inherent aromas and terroir. Fermentation takes place in concrete tanks at 30-31 degrees Celsius for 12-20 days, followed by pressing with an air-operated press. The wine is left to rest for 1-2 hours to remove large impurities, and then transferred to barrels. The village wines are aged 50% new, the first growths 60-70%, and the grand crus 100% new, but Chambolle-Musigny uses fewer barrels to preserve its elegance. After malolactic fermentation, the wines are aged for three months on the lees, and only in years with a high sediment content are they bottled after being lightly filtered.

Due to the small size of the domaine, it is not well known, but it has always received the highest praise. Regarding the charismatic winemaker and legendary Cathyard Molinier, R. The original domaine was founded in 1930. My grandfather, who was a civil servant, made wine through sharecropping and gradually bought vineyards. We started Domaine Motozume in the late 1950s. After getting married, Mr. Sylvain attended gatherings of young vignerons and tasted a variety of wines, which led him to want to make his own wine, so he became independent by sharecropping his father's vineyard. Since then, except during harvest, the couple has been in charge of everything from cultivation to brewing and sales. When Mr. Andre retired in 1995, his three sisters and four others turned the domaine into a company, and Mr. Sylvain bought the company and inherited all the fields, and currently owns 5 hectares.Currently, his son Sebastian As the fourth generation, we have been making wine independently since 2011.
With Sylvain, we quickly rose to the top in terms of taste and reputation.

In addition to using old wood, we also use light soaking at low temperatures and non-filtering (depending on the year), and the quality has improved to such an extent that it is no exaggeration to say that it is the best in Vosne.
