No herbicides or chemical fertilizers used. Pruning is very precise, and the pruned young branches are crushed and spread on the field to deliver humus. All harvesting is done by hand, and there is no brewing before fermentation, which is fermented at 30 degrees for 15 days. The white is gently pressed using a pneumatic press to precipitate impurities, then fermented in barrels. Red is completely destemmed and gently pressed only once after fermentation. Both red and white are aged in barrels for one year. The ratio of new barrels is 30% from village names, 40% from first-grade fields, and 50% from special-grade fields. The whites undergo fining and light filtration, while the reds undergo light fining before being bottled.

In this way, Paul Pernod strives to use natural methods to bring out the characteristics of the terroir and vintage. We pay great attention to detail and are extremely particular about quality.

By suppressing the yield and using a moderate amount of new barrels, it becomes surprisingly rich and rich, and this great wine is considered one of the top three producers of Puligny.

A hidden domaine competing for the Puligny-Montrachet throne

Domaine Paul Pernod has been one of the top producers of Puligny-Montrachet and Batard-Montrachet since its founding in 1850. Currently run by founder Paul Pernod's grandson and his sons, it is highly regarded as a domaine that competes for the throne of Leflaive and Puligny. They own many excellent fields and previously sold many of their grapes to Joseph Drouhin and others. Currently, most of the wine is bottled under their own name and they produce excellent wine. We own a variety of excellent fields and cultivate them with great care. The average age of the vines is 30 years, with many of the younger vines being 20 years old, producing high-quality grapes. Natural methods are used to bring out the characteristics of the terroir and vintage. We use a very strict rut raisonné and do not use chemical fertilizers. Pruning is done very carefully, and the young branches that are removed are crushed and scattered on the fields. All harvesting is done by hand and with great care.

Even in brewing, we are extremely particular about quality. There is no brewing before fermentation, and fermentation takes place at 30 degrees for 15 days. The white is gently pressed to allow impurities to settle out and then aged in barrel for a year. Pernod wines, both red and white, are characterized by a delicate oak aroma.
