The relatively fertile, clayey soil contributes to a richer, more powerful flavor. Its classic aromas include lemon, apple, and white flowers, with a touch of new oak. The palate is full of firm tension and concentrated fruit, with a wonderful depth, minerality, and energy.

His appearance is reminiscent of an old-fashioned craftsman. Although he has a quiet personality, he is very honest and has a personality that conveys his strong beliefs as a vigneron. His career as a vigneron began in 1988 at his father's domaine, Louis Carillon. Since then, Francois has gained experience in field work, harvesting, and brewing, and has inherited the Carillon family tradition from his grandfather and father. Even today, Francois's winemaking is still very much about the Carillon family's philosophy that ``the fields create the quality of the wine.'' Currently, in addition to the venerable vineyards inherited from his father, Francois, who has an extraordinary passion for field work, is making wine from carefully selected and acquired fields. His wines all have the rigor and finesse of Chardonnay from the great Puligny region, with a pure and intimate character. In 2014, it was selected as one of the 50 greatest domaines in Burgundy at "La Revue du Vin de France", along with Comte Lafont and Leroy, and is a new carillon that is expected to be a domaine that will attract attention in the future.


A new history of great white
The Carillon family represents Puligny-Montrachet, which can be traced back to Jean Carillon in 1520 as a vigneron. His predecessor, Louis Carillon, is a great white maker who, like Comte Lafont and Leflaive, has been praised by Clive Coates with the highest rating of 3 stars. In recent years, the 16th generation brothers, Jacques and François Carillon, have been responsible for brewing and cultivating the wine, but upon the retirement of their father Louis, the vineyards were divided. In 2010, François became independent from the domaine inherited by his older brother Jacques. François Carillon was born as a new brewery for the Carillon family.
