(The following is from the importer's materials) Mr. Sylvain believes that wines that are dark in color and have firm tannins, like Bordeaux, hide the fruit aromas and aromas that are characteristic of Pinot Noir. We aim to create wines that are dense and concentrated, yet have a good balance between tannins and fruit. Cultivated in Rutte Raisonné. Organic fertilizer is used, along with chemicals to kill weeds that have grown and a spade. For pest control, we use hormone capsules, which were introduced early in Burgundy. The hand-harvested grapes are 100% destemmed and cold soaked for 2-10 days. Juice concentrate is not used because it detracts from the aroma and terroir of the grapes. Fermentation takes place in concrete tanks for 12 to 20 days at 30 to 31 degrees Celsius, and the wine is pressed using a pneumatic press. Let stand for 1 to 2 hours to remove large impurities and transfer to barrel. We use 50% new barrels for the village, 60-70% for the first grade, and 100% for the grand cru, but the amount of Chambolle Musigny is kept to a minimum in order to maintain the elegance. After malolactic fermentation, the wine is aged for 3 months on the lees and bottled without fining, only in years with a lot of lees, with a light filter.
Sylvain Cathiard
Although it is a small domaine, it is indispensable when talking about Vosne Romanée, as it owns the special field Romanée Saint-Vivant, as well as first-class fields such as Haut Malconsole, Les Suchots, En Orvaux, and Haut Regno.
Due to the small size of the domaine, it is not well known, but it has always received the highest praise. Regarding the charismatic winemaker and legendary Cathyard Molinier, R. Parker said, ``The quality of the wine is of the highest level'' and ``Why is it less well-known than other wines that are full-bodied and intensely flavored?'' , gave it a 4-star rating.
The original domaine was founded in 1930. My grandfather, who was a civil servant, made wine through sharecropping and gradually bought vineyards. We started Domaine Motozume in the late 1950s. After getting married, Mr. Sylvain attended gatherings of young vignerons and tasted a variety of wines, which led him to want to make his own wine, so he became independent by sharecropping his father's vineyard. Since then, except during harvest, the couple has been in charge of everything from cultivation to brewing and sales. When Mr. Andre retired in 1995, his three sisters and four others turned the domaine into a company, and Mr. Sylvain bought the company and inherited all the fields, and currently owns 5 hectares.Currently, his son Sebastian As the fourth generation, we have been making wine independently since 2011.
With Sylvain, we quickly rose to the top in terms of taste and reputation.
In addition to using old wood, we also use light soaking at a low temperature and non-filtering (depending on the year), and the quality has soared that it is no exaggeration to say that it is the best in Vosne. For a long time, he disliked journalism and was kept in the position of being known only to those in the know, but he has already gained tremendous popularity among wine lovers, and even in Japan you rarely see genuine products.
Wine with a high degree of perfection and expressive power as an art
Sylvain's style is extremely soft. The finesse, fragrance, and expressiveness are amazing, reaching the level of art.
The other day I drank a back vintage of Catiar, and I really like this wine! I was convinced. Since the generation has changed, it has become more beautiful every year, and the quality of tannins and fruit flavor have also changed.
Smooth tannins and extended acidity, a gentle character and energetic fruit flavor. Adds gorgeousness and high-dimensional beauty, with outstanding energy and purity of fruit.
