Brewing technology is truly a craftsmanship! A wonderful bottle made by a rising star of Burgundy! It has a very fresh impression with citrus fruit flavors such as lemon and mandarin. As time passes, you can fully enjoy the process of changing to the scent of fruits such as peach and apricot. In addition, the aroma of biscuits and pastries derived from barrel yeast (MLF, malolactic fermentation) is added to create a sense of unity, giving the wine a mellow nuance as a whole. Bachelet Monnot

A new creator who will inherit the future

It was started in 2005 by brothers Marc and Alexandre who rebuilt their grandfather and father's domaine. Although the domaine is based in Maranges, it has a very strong lineup of white wines from the Côte de Beaune, including Puligny-Montrachet, Chassagne-Montrachet, and Meursault. They first built a building behind their house to carry out everything from fermentation to aging. At that location, the wine is aged in barrels for a year and then left in contact with the lees for about six months in a tank.

Also, they usually allow the lees to be stirred until the malolactic fermentation is finished. It sometimes lasts for 1-2 months. The ratio of new barrels is modest, with around 50% new barrels used for Premier Cru and more for Batard and Bienvenue. By using soft, lightly toasted barrels, we avoid giving the wine an excessively roasted aroma.

The brothers attracted attention from the French media with their mellow and rich debut vintage in 2005. Looking at the evaluations over the past few years, they have shown steady improvement, and it can be said that this is a maker that we should keep an eye on in the future.
