I Need the Sun・Miroirs・2015

Mr. Kagami was thinking of trying white wines such as Radikon and Vodopievets, which are fermented with their skins, if the vintage permits.
The first vintage, 2011, was blessed with great weather during the harvest period, and apparently the grapes were harvested with healthy and informative skins worthy of fermentation, but since this was their first time making wine, the grapes were carefully selected for each plot. We apply the same vinification methods to all the grapes in order to better understand their characteristics.

Since then, there have been years with poor weather in 2012, 2013, and 2014, and in 2015, for the first time since 2011, we have grapes with strong skins.
This wine is made using Chardonnay, which was harvested the latest in the 2015 vintage, and is destemmed and lightly crushed for 45 days.
The acidity is mild, the volume is rich, and in a sense it is a wine that is not typical of Jura.

It's not sweet, but I think it's suitable for enjoying slowly after a meal. They decided to bottle this wine in 500ml bottles because they wanted as many people as possible to enjoy the wine's low production volume (2 barriques) and its richness.
